Western States 100 mile- Great race- Great Runners

Enjoy watching #WSER from afar. The updates and pictures as the runners/leaders pass through all the well known aid stations. Also enjoy seeing the ebb and flo of the race as i watch from 3000 miles away. I look forward to #WS100 every year and hope to see the winners and leaders in Vail for #UROC at the UltraRace of Champions.

Some of my favorite fuel – Summertime fun- SWEET POTATOES July 4, 2013

I love sweet potatoes in many and ANY form. baking and frying and pie or mash. But summer time calls for picnics and picnics + salads.

For a recent birthday party/picnic I wanted to make a hot weather salad, that would be safe in the heat- was great as it stayed cool but OK when it got warm.


6 Sweet potatoes -3/4″ dice

2 Vidalia (or other sweet) Onions- diced

4 tbs EVOO

8 green onions chopped with green tops

2 green apples diced

1 cup red grapes(some sliced)            Image


1/2 cup Extra virgin Olive oil               -1/2 cup apple cider vinegar

1/2 cup of cilantro                              -1/4 cup Orange juice

1tsp sea salt             -1 tsp fresh black pepper      1/2 tsp paprika

orange zest

1. Combine oil,vinegar and juice in blender until emulsified then add remaining ingredients – cover and refrigerate.

2. Toss potatoes and Onions and then roast in 400 degree oven for 30-40 minutes , until just soft

3. Remove from oven and combine with other ingredients   and the dressing- toss completely and put in covered container and store in fridge for at least 2 hours or over night.
